* Chicken-Salad *



* Ingredients

°3 to 4 pounds chicken pieces (bones in, skin on thighs and breast work well)
° 2 tablespoons of high quality olive oil
°1 cup seedless grapes, halved (red and green varieties are excellent)
° 1 cup finely chopped almonds (optional)
°1 stalk of celery, sliced
°4 pieces green onions, thinly sliced ​​white and green
° 2 tablespoons chopped fresh dill
° 1 tablespoon chopped fresh parsley
°1 cup mayonnaise
° juice of 1 lemon
° 1 tablespoon Dijon mustard
°1 teaspoon kosher salt
° ground pepper
