*Ingredients:
° 2 tablespoons of olive oil
° 1 teaspoon sesame oil
° 2 pounds of boneless, skinless chicken breasts or thighs
° 1 tsp of soy sauce
° 2 tsp cornstarch
° 1 green pepper thinly or cut to pieces
° 4 oz mushrooms, sliced
° 1 ½ c snow peas
° 2 tsp minced garlic
° 1 tsp ground ginger into a paste
+ Sauce
° 1 ½ tsp rice vinegar
° ⅓ c soy sauce
° 3 tablespoons of white cooking wine
° 1 tablespoon of honey
° 1 tablespoon cornstarch
° 1 tablespoon of olive oil
° 2 tablespoons brown sugar
*Methods
FIRST STEP:
Cutting chicken to pieces
In bowl mixing soy sauce & cornstarch
SECOND STEP:
Add the chicken to the bowl and coat well
In another bowl, add the cooking wine, rice wine vinegar, soy sauce, olive oil, honey, cornstarch and brown sugar.
Mix well
THIRD STEP:
In skillet on stove, adding sesame oil & olive oil on medium heat
Add the meat to the skillet and cook until the chicken is browned on all sides
FOURTH STEP:
Removing chicken & set apart on a plate
In skillet, adding mushrooms, cashews, snow peas & bell pepper with sauce and cook to tender
FIFTH STEP:
Adding garlic and ginger also mix well.
Sauté for 30 sec more, then returning chicken to pan.
STEP SIX:
Stirring to combine also sauté other 5 mn.
Serve with a side of white rice and garnish with chop green onions.
