COWBOY MEATLOAF AND POTATO CASSEROLE


*Ingredients:

°¾ c chopped onion
°⅓ c dried breadcrumbs
°1 pound lean ground beef
°¼ c barbecue sauce of your choice
°2 t chilli powder
°¾ t of salt
°1 beaten egg
°Potatoes
°1 pack butter flavored instant mashed potatoes
°⅔ c evaporated milk
°1 t chopped parsley
°1 t of butter
°1 t garlic powder
°1 c  bacon
°¼ c crispy fried onions
°⅔ c shredded Monterey Jack cheese

*Instructions

FIRST STEP:
Heat oven to 375*, lightly spray a 9x9 baking dish
In a large bowl, combine the ground beef, onion, barbecue sauce, breadcrumbs, egg and spices.
SECOND STEP:
Press the meat mixture into the bottom of the sprayed dish
Bake uncovered for 20 minutes
THIRD STEP:
Remove from the oven and carefully drain the fat
In another bowl, prepare the instant potatoes and mix with the evaporated milk, cheese, dried onions, butter and bacon
FOURTH STEP:
Spread the potato mixture over the meat and sprinkle with grated cheese, bacon and dried onions.
Place under broiler, 6 inches from broiler, and broil for 3 minutes.
FIFTH STEP:
Serve with an extra portion of barbecue sauce if desired.
