Easy burrito casserole


1 16 oz can of fried beans
1 14 ounces whole corn, drained
1 pound ground beef, or choice of meat
1 package taco seasoning mix
1 can enchilada sauce
1 small can of green pepper
8 large tortillas of your choice, cut in half
2 cups grated Fiesta cheese
Sliced ​​green onions for garnish


Preheat oven to 350*
Fry the minced meat in a large frying pan
Add the taco seasoning and simmer for a few minutes
Add the enchilada sauce, refried beans, corn and a small can of green pepper
Stir well and let it simmer for a few more minutes until heated through
In a 9x13 baking pan, grease the bottom of the pan, then place four tortillas to cover the bottom of the pan.
Pour the first layer of tortilla with half the meat mixture and half the amount of grated cheese
Put another layer of chopped tortilla on top of the cheese
Cover the tortilla with the remaining meat mixture and the rest of the grated cheese.
Bake for 20 minutes
Garnished with chopped green onions
