Mexican cornbread


The most delicious corn bread ever!

1⁄2 cup melted butter
3⁄4 cup white sugar
4 eggs
1 can of creamy corn (15 ounces)
4.5 ounces chopped green chilies, drained
1⁄2 cup shredded Monterey Jack cheese
1⁄2 cup shredded cheddar cheese
1 cup all-purpose flour
1 cup yellow cornmeal
1⁄4 teaspoon salt
4 teaspoons baking powder


Preheat oven 300 degrees F. Grease a 9" by 13" baking dish.
In a large bowl, whisk together butter and sugar. Beat the eggs, one at a time. Combine with cream of corn, chili, monterey jack cheese, and cheddar cheese. In a separate bowl, mix flour, cornmeal, baking powder, and salt together. Add the flour mixture to the corn mixture. Stir until smooth. Pour the mixture into the prepared skillet. Bake in a preheated oven for 1 hour, until a clean toothpick inserted in the center of the tray.
